For any lunch or dinner, a simple stir fry-style dish with the crunch of toasted chia seeds!
In this recipe I use chia seeds to add some protein and fiber. They also give a nice texture to the dish. You will never eat cabbage the same way again. Let's just get straight to the recipe!
How to make sautéed cabbage with chia seeds?
Ingredients
250 grams boneless chicken (breasts, thighs, legs)
2 tsp. Olive Oil (divided)
1 tbs. PCOS30 Organic Chia seeds
3 cups Sliced Cabbage (¼ inch thick)
2-3 tbs. Coconut Aminos
½ tsp. Sesame Oil
2-3 tbs. Green Onion to garnish
Method
Chop the boneless chicken into chunks and place them in a food processor. Process until the chicken is minced. You need a bit of texture and not a mushy chicken.
Cut the cabbage into 14-inch thick slices. Place aside.
1 tsp. olive oil in a medium-sized skillet over low-medium heat. Add the minced chicken, increase the heat to high and stir-fry for 2 to 3 minutes until the chicken turns white.
Add the chia seeds. Toast for about 5 minutes, stirring every now and then.
Add cabbage and 1 to 2 teaspoons additional olive oil. Cook for an additional 4-5 minutes after adding the coconut aminos. Begin with a small amount of coconut aminos (1-2 tsp, then increase to taste; 3 is tasty but salty!)
Turn off the heat and add sesame oil.
Serve warm or cold with sliced fresh green onion as garnish.

Cabbage is one of the most nutritious foods there is, and chia seeds are full of Omega-3 fatty acids. Mix the two together, and you've got a super-healthy side dish.
