It’s Saturday morning, you don’t want to leave the house and have nothing to eat. Here is the recipe for those days.

Healthy Apple Cinnamon Oatmeal Breakfast Cookies come up soft and warm with pieces of cooked apple throughout.


How To Make Apple Cinnamon Oatmeal Breakfast Cookies


Ingredients:

2 1/2 cups PCOS30 Rolled Oats

1 1/2 cups Unsweetened Applesauce (homemade or store bought)

2 tsp. PCOS30 Cinnamon

1/2 Apple, cored and diced

1/4 cup Provita Shape in Shake






Method

Prep: Preheat the oven to 175°C. Line a baking sheet with paper, a silpat, or lightly coat with oil.

Mix: In a medium mixing basin, combine the oats, shape in shake, applesauce, cinnamon, and mix well to blend. Prepare the apple, allowing it to set for a few minutes. Mix in the apple once more.

Scoop: Using a tablespoon measurer, scoop out well-rounded mounds of the mixture, gently packing it with your fingertips and placing them on a baking sheet. If not properly packaged, these may fall apart.

Bake: Place a cookie sheet on the middle rack of the oven and bake for 17 to 20 minutes.

Allow a few minutes to cool before serving. Makes 16 to 18 cookies.

Store: Store leftover cookies on the counter, covered, for 3 to 4 days.



They're ready to eat after they've been baked and cooled slightly. These are best served warm and go well with a cup of PCOFFEE - Rice Coffee.
