These OVEN ROASTED CAMOTE CUBES are tossed in olive oil and cinnamon before baking - a cozy side dish that’s perfect for any night of the week.
This is not only easy to make, but it's also delicious and goes with everything!
How to prepare?
4 Camote (Sweet Potato), peeled and cut into 1-inch cubes
1/2 cup Extra-virgin Olive Oil, plus more for drizzling potatoes after cooked
2 tsp. PCOS30 Cinnamon
1/2 tsp. Salt
1/2 tsp. Freshly Ground Black Pepper
Preheat the oven to 190 degrees Celsius.
Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the olive oil, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in the oven or until tender.
Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.
